Mater Iniciativa es un un grupo multidisciplinario de profesionales ligados a la gastronomía que busca mediante la investigación, generar y compartir información útil sobre nuestra rica pero poco conocida biodiversidad para mejorar su valoración y con ello aportar al conocimiento colectivo y beneficiar a los productores.

Esta vez, el equipo de Mater Iniciativa se aventura a explorar el sendero María Josefa, en Áncash. El recorrido inicia a los pies del nevado Huascarán, en el Parque Nacional que lleva el mismo nombre, con el objetivo de involucrarse más con el tarwi o Lupinus mutabilis, especie leguminosa a la que se acercó por primera vez en Paucartambo. En el Sendero María Josefa, los lupinos son custodiados por preciosos quenuales descascarados, huamanrripas, cedrones y ajenjos que hacen de la jornada un viaje entre aromas, colores, sonidos y texturas. El tarwi son semillas que crecen resguardadas por vainas, como las de las habas. Dentro de cada una se puede encontrar hasta seis semillas.
