Cuando el Gobierno determine que el take out y el delivery ya pueden comenzar, Maido estará listo con una propuesta que privilegia lo sabrosón y casero, que pone esencial cuidado en lo sanitario, y que pretende reconectar con ese comensal que tanto cariño demostró en estos últimos 10 años. Hoy conversamos con Mistuharu Tsumura, Micha, también sobre la necesidad de la formalización de la industria, sobre lo imprescindible de entender que hay que llegar a un balance en el que el gobierno también fomente la legalidad, sin ahorcar al pequeño empresario.
Los primeros días de la cuarentena a Mitsuharu Tsumura (Micha) de Maido se le pasaron muy lento. Luego, la primera semana se convirtió en la tercera y, al final, como el hombre es un animal de costumbres, fue aceptando lo que tocaba y el tiempo pasó más rápido. Las ideas, eso sí, le seguían revoloteando en la cabeza, al comienzo con mucha incertidumbre, como todos, pero en estos últimos días con un cierto positivismo que recorre el planeta. El optimismo se hace indispensable –afirma Micha–, la vida sigue y es deber de todos poner el hombro. “No sé cómo será la vuelta a la normalidad. Estar en modo positivo es importante para mantenernos motivados, generar empleo, a pesar de que todos estemos golpeados económicamente, incluso el Estado. Y si tuviste que cerrar porque no te dieron los números, empezar de cero es una opción, lo ha hecho mucha gente y con muchos amigos cocineros ya lo hemos hablado”.

Te has mantenido bastante alejado de las redes sociales en estas últimas semanas, del ojo público. ¿Te convertiste en un observador? Un poco, esta crisis no tiene precedentes. Todos están viviendo la pandemia, nadie tiene luces todavía, solo que uno debe cuidarse, ser responsable. Todos los gobiernos están igual, nadie posee el plan perfecto, sin fallas, sin prueba y error. Pero lo que hay que rescatar es la salud, el tener que estar bien, chequearse, muchas personas no son tan conscientes hasta que les pasa algo, no me excluyo del tema: sin salud no tienes nada. Esperemos que nos queden las buenas costumbres: desinfectar los zapatos, la mascarilla. Creo que los niños, la nueva generación que viene ahora, tendrá ese chip.
La pandemia nos ha afectado a todos, al sector gastronómico de manera tenaz. Y a esto se suma que somos un gremio donde abunda la informalidad. Esta crisis ha revelado mucha de la precariedad escondida en la industria. Algo de lo que no se hablaba mucho. Por el lado económico se tiene que entender que gran parte del país es informal. Cambiemos de dos formas, el informal o independiente que comprenda, por más pequeño que sea, que no puede estar fuera del sistema. Pero también tiene que haber un plan de acción post cuarentena, por ejemplo, no que se cobren impuestos excesivos, sino a escales accesibles y de acuerdo con tus posibilidades. Se aspira a que la gente comprenda y cambie, pero tiene que existir ayuda del Estado y programas atractivos para que el emprendedor se formalice, tenga acceso a créditos, sepa que estando dentro del sistema puede tener beneficios para expandir el negocio, crecer como empresario, sino todo lo que mueves es plata que no está bancarizada, no hay beneficios, no estás en planilla. Se necesitan herramientas, con análisis sesudos, con balance y equilibrio para que la gente se acoja.
¿Se puede ver esto como una oportunidad para construir una industria más sólida? Dentro de esta crisis, muy aparte de la salud, de tomar conciencia, de valorar lo que teníamos antes y añoramos, nos han dado un sacudón: es necesario ser formal. No estoy diciendo que el país no tenga necesidades, ni que todos pueden acceder a la tecnología, sino que la brecha se podría ir reduciendo. Es un trabajo titánico, pero se podrían haber evitado tantos contagios. En temas económicos se están haciendo cosas bastante buenas, pero también mucho depende de nosotros. Hay un punto en el que se pueden dar directivas, pero si la gente no las cumple no vamos a llegar a una solución.

¿A qué nos referimos con estos cambios, con esta “nueva realidad en cocina”? Que el cuidarnos sea una costumbre y no solo hasta que se encuentre el tratamiento y la vacuna. Cuando uno habla de una nueva realidad, por supuesto vamos a dar lo mejor en el tema sanitario, pero esto no significa que no vamos a ser los mismos en esencia: bailaremos, iremos a conciertos, tendremos contacto. Eso nos da vida, es nuestra gasolina, muy aparte del trabajo. Es una nueva realidad temporal nos ha hecho darnos cuenta que pasar más tiempo en casa es importante, y que la tecnología ayuda a resolver muchos problemas: en lugar de andar viajando todo el año se pueden hacer conferencias vía redes o Zoom. Hemos tomado una pausa en la vida y es momento de corregir todo lo malo que ha pasado para que no se vuelva a repetir. Sacar qué cosas buenas que no deja la pandemia: que el teletrabajo ayuda a que no estés estresado en el tráfico y que no contamines, además de a ahorrar. Van a transformarse algunas cosas, pero para bien.
Nos han quitado los abrazos. El tema es cómo llevas tu vida en el día a día para que ese abrazo no venga con yapa. Mucha gente tiene miedo de ir donde sus papás, pero por eso es necesario seguir todos los protocolos de seguridad. Poco a poco, a medida que pase el tiempo, nos daremos cuenta que es necesario aportar a la nueva normalidad, que al final sirve para mantenernos sanos.

Empezar de cero va a costar mucho. Hay varias opciones, pudiste abrir y mantener a tu gente, genial; no pudiste, la vida no se acabó. Creo que hemos salido como país de situaciones catastróficas. Violencia, hiperinflación, muerte, fuga masiva de peruanos. Y hasta hace algunos años, estábamos en un Perú totalmente distinto que no hubiese podido aguantar una situación como la de hoy, que ha permitido apoyar a más gente. Nada está perdido. Recordemos cómo comenzamos, con la mayor energía, y pensemos que todo se puede volver a hacer. Hay países que han salido de la nada, perdiendo todo. Luchemos por la gente que nos acompañó, volvamos a llamarlos y arranquemos de nuevo. Es momento de echar a andar la máquina con medidas.
¿Cómo seguir ofreciendo Maido? Lo bonito de Maido, y ahora lo he notado más cuando he tenido que reducir la carta, es que al principio era un tres en uno, luego sacamos la parte japonesa y nos quedamos con un dos en uno: nikkei y menú degustación. Hay un público local que nos acompañó durante más de una década, que podía comerse un menú, pero también llegar por un lomo saltado o una sopa ramen. Inclusive un postre, los churros. Este híbrido que nos acompañó tanto, nos guio para hacer una carta que pudiese viajar. Habrá entre 15 y 20 platos, entre fríos, calientes y postres. Hemos vuelto a los makis y nigiris, sashimis, y habrá un cebiche, el nissei. También estará el asado de tira, el arroz con pato, los sanguchitos, el chicharrón de pollo, una hamburguesa a mi estilo y el tacuchaufa. El ramen, pero separado, para que lo hagas en casa: la pasta, el caldo, las guarniciones. Lo mantendremos simple con cosas que en casa se complica hacer.

¿Además harán productos propios? Productos y soluciones, y te olvidas de la chamba. La salsa madre de ají amarillo con la que arranqué Maido estará empacada al vacío, esa de la que se deriva el sudado. O mi pack de ajíes. Industrializar nuestras salsas será importante, porque los sabores cambian y tienen que durar un año. Todo se va al pack que tendrá rocoto parrillero, el ají amarillo, el chili oil con pimienta de Sichuán y tausi, ajíes secos y el ají de Micha. De todo lo que dices, se deduce que se va a reforzar bastante la comida nikkei casera, esa con la que la comunidad japonesa comenzó a conquistar al comensal peruano cuando algunos de sus miembros abrieron las primeras fondas criollas para ganarse la vida fuera de las haciendas. Sí. Se va a reforzar la cocina nikkei casera y la que se venía haciendo más elaborada, más de autor, está bien y esperemos que siga el rumbo; pero esto es lo casero. Los guisos, los arroces, aguantan muy bien. Es una vuelta de tuerca, mucha gente quizá no asocie lo nikkei a lo criollo, pero se trata entonces de dar a conocer esa cocina y entender esa parte de la historia, y que los restaurantes vuelvan mucho a sus orígenes. Estamos pensando en una comida sabrosona que nos provoque a todos y en despertar esa otra faceta de muchos cocineros en el Perú que no conocíamos porque sus formatos eran diferentes.
¿Será suficiente el delivery para mantener un restaurante? No creo que vendamos ni la cuarta parte de lo que vendíamos antes, pero sí lograremos mantenernos y sí habrá conexión con el comensal, y quizá salgan ramas dentro de los restaurantes de alta cocina o se vuelvan más creativos.
Esa relación que tenía un restaurante con el cliente antes de la crisis, ¿favorecerá la llegada? Estamos con las ganas de volver a reconectar, la comida transmite y ahí vamos a estar, con fe y mucho optimismo. Espero que retomemos nuestras vidas más rápido de lo que pensamos, de una manera más responsable y consciente, disfrutando de esas pequeñas cosas que nos llenan el alma y el corazón. Ahora no es momento de pesimismo sino de esperanza. Tenemos que asumir retos en la vida y son etapas que viviremos y que luego contaremos a los más jóvenes. La luchamos hasta el final, primero que nada, por nuestro equipo, por quienes hacen posible que esto funcione, e igual de importante y en paralelo, por el público que nos ha tenido tanto cariño. Nos llegan mensajes y sentimos la solidaridad de la gente. Nos sentimos acompañados.
