La semana pasada se celebró la IV edición de la competencia de la Asociación Peruana de Sommeliers (APSOM), que pone a prueba el talento de jóvenes peruanos dedicados al servicio del vino y bebidas en restaurantes, hoteles y locales en general. El ganador competirá por el título de mejor Sommelier de América el próximo mes de abril en Chile. El concurso, más que interés, ha causado controversia, y al parecer, razones sobran.
En los últimos años, el crecimiento a nivel de servicio en restaurantes en el Perú y de cuidado por los detalles es más que palpable. En esta ecuación, el vino y su importancia para la restauración y el consumidor final, tienen un espacio que cada vez gana más fuerza. Al año se gradúan cientos de jóvenes de los diversos institutos donde se imparte la formación de sommelier, que luego salen “al ruedo” en la sala del restaurante. Pero, ¿qué significa ser sommelier? Sommelier es el experto que sugiere a la clientela de los restaurantes el vino apropiado para la ocasión: analiza desde la perspectiva del consumidor, de una manera objetiva, sin ninguna atadura al productor. La Asociación de la Sumillería Internacional (ASI) considera requisitos indispensables saber de manejo de presupuesto, técnicas de comercialización y gestión de inventario; además de facilidad para comunicarse y lidiar con el público.
Esto lo tiene claro Gregory Smith, director de vinos del Restaurante Central, quien llegó al Perú hace más de seis años desde su natal Estados Unidos, y ha sido pieza fundamental para esta evolución y crecimiento de la cultura del vino en restaurantes. “El sommelier debe realizar inventarios, pedidos, diseñar la carta de vinos y llevar la parte de los costos”, asegura. “En Perú falta mayor especialización en el currículo de los sommeliers, que prueben y que viajen más”. Pero para él también es palpable el aumento del nivel de la sumillería peruana. Hace cuatro años, Greg se unió al equipo de Central del chef Virgilio Martínez, que figura en el primer puesto de la lista de los 50 mejores restaurantes de América Latina. Esto le ha permitido aplicar sus conocimientos de manera más extensa y palpable. Su labor como Director de Vinos desde esa “trinchera” es muy amplia: desde formar a los chicos de su equipo (que no son necesariamente todos peruanos) y desarrollar propuestas de vinos originales que subliman la experiencia gastronómica; hasta romper esquemas en el mercado al ponerle un parado a las prácticas “de cobranza” que se ejercen todavía en muchos restaurantes como “requisito” para ingresar en la carta.

Su equipo de sumilleres, todos chicos de menos de 30 años, estuvo de fiesta hace algunos días, porque Joseph Ruiz Acosta, ganó el concurso del Mejor Sommelier del Perú. Esto le permitirá concursar en abril en Chile por el título de América. Pero aunque la noticia es positiva, las circunstancias en las que se realizó el concurso y los detalles que lo rodean desde hace algunos años, le quitan el entusiasmo. “Participé porque mi meta es ir al Panamericano. Si no, no lo hubiera hecho. El concurso fue sumamente desorganizado. Esperaba otra cosa; pensé que sería mejor que hace tres años. Prometieron muchas cosas, pero poco se cumplió”, asegura Joseph. El ente a cargo de la organización es la Asociación Peruana de Sommeliers (APSOM), cuyo presidente, Alan Cayo, es objeto de observación y críticas por varios motivos, entre ellos haber permanecido en el cargo durante los cerca de 10 años que tiene la entidad.
¿QUÉ ES APSOM?
La APSOM nace como una asociación civil sin fines de lucro, con el objetivo de apoyar el oficio de la sumillería en el país. De educar, informar y además generar relaciones a distintos niveles con la sumillería internacional. Como cuenta Soledad Marroquín, comunicadora gastronómica involucrada en el tema desde hace más de 15 años y ex directora del Instituto del Vino y el Pisco entre 2005 y 2007: “Al inicio confiaba en APSOM. De hecho me consideraban como madrina. Los socios eran sommeliers con experiencia, que estaban activos, ejerciendo. Ahora, casi 10 años después, me da pena ver cómo se ha decantado”. Incluso hace algunos meses hubo una migración y adhesión considerable de nuevos miembros a la otra asociación reconocida en el Perú como formadora de sommeliers: la Unión Peruana de Sommeliers (UPS), que existe hace varios años también. Se fundó poco después que la APSOM, y está conformada por profesionales del rubro, aunque no necesariamente ejerzan el servicio en la sala del restaurante. De hecho, dentro de sus estatutos permite que haya miembros en la directiva que no sean peruanos.

Mucha agua ha corrido en esta década en que la sumillería se ha desarrollado y es vista con mayor interés dentro y fuera del país, sobre todo cuando la gastronomía puntea como referente de la región. Esto ha colaborado para generar mayor competitividad entre los actores y así llegan los concursos. La gente de Cencosud a cargo de la cadena Wong, realiza el concurso del mejor sommelier de Wong una vez al año en el marco del Expovino, evento que exhibe la variedad de vinos presentes en el mercado peruano. Pero el concurso que tiene el mayor peso en cuanto a importancia y exposición internacional es el que organiza la APSOM, pues está avalado por la Alianza Panamericana de Sommeliers (APAS) que congrega países de Norte y Sudamérica. La APAS, a su vez, forma parte de la Asociación de Sommelerie Internacional que avala miembros de todas partes del mundo.
¿Y de qué va este concurso? Se trata de varias pruebas que se desarrollan durante dos días. La primera jornada es la de las eliminatorias, durante la cual deben superar ocho test teórico prácticos; y el segundo día es la final – pasan solamente tres candidatos -, donde hay siete pruebas prácticas y orales. Entre otras cosas, los sommeliers tienen que responder cuestionarios sobre enología, conocimientos del vino, geografía vitivinícola, identificación y corrección de una carta de vinos. Y en la parte práctica, deben catar a ciegas cuatro ejemplares, hacer el servicio de espumante y cóctel, así como la decantación de un vino; tomar la comanda y recomendar maridaje (armonía entre el plato y el vino), entre otras. Pruebas a las que se enfrentan cada día en sus puestos de trabajo, pero que reunidas en un corto período de tiempo, representan un reto mayor, o al menos así debería ser. Los detalles del concurso están estipulados en el reglamento de la APSOM que mandan a los participantes y a los jurados invitados para la ocasión, que según los participantes fueron poquísimos, especialmente el primer día.
Esta es la cuarta vez que se realiza el concurso en el país, pero es desde la tercera edición (2012) que ha cobrado fuerza y también ha sido observado de cerca. Por una parte, debido al aumento de candidatos que en ese momento fue poco más de una veintena, y por otra porque hace tres años el tema de los sommeliers y el vino tenía ya un espacio importante. Greg Smith participó como miembro del jurado en esa edición y además apoyó con la organización. Pero sus recuerdos no son muy positivos. “El primer día comenzamos la prueba práctica dos horas después de lo previsto y durante la prueba de servicio del vino, Alan Cayo atendía el teléfono y se ausentaba para conversar. Pero lo más grave de ese año (2012) fue que no cumplieron con proveer el pasaje al ganador para que asista al concurso Panamericano. José Miguel Burga, tuvo que resolver por su cuenta el ir a Brasil para representar al Perú. Felizmente, lo logró.
Luego de esa experiencia, el resultado en esta próxima edición ha sido la falta de interés de los chicos por participar. De hecho se inscribieron apenas ocho. Pero como dice Joseph, a él le importa ir a la competencia de la Alianza Panamerica, así que se prepararon por su cuenta y se presentaron el 16 de marzo en las instalaciones del IDVIP (Instituto del Vino y del Pisco) a las 08:30 horas, cuando se había estipulado comenzar la parte teórica. “Llegamos a la hora indicada y no empezamos la parte teórica, sino hasta pasadas las 10:00”, cuenta Joseph. Y asegura que se sorprendió cuando al recibir el examen, al menos en un 50% las preguntas eran las mismas de la edición anterior, en la que participó.
En la parte práctica, según Joseph, también faltó nivel de dificultad. Durante la cata a ciegas en la que deben adivinar el vino, carecían de opciones clásicas para identificar; y en el maridaje sobraba improvisación. En cuanto a la prueba de la coctelería, en la cual debían mostrar sus habilidades preparando un trago, les pidieron hacer un chilcano; algo que dista mucho de la coctelería clásica. Los chicos recalcan el nivel de preparación que cada uno ejerce por su lado y esta prueba debe ser un desafío para el que desee llegar a ser el mejor sumiller de América. Estos detalles, para nada menores, representan una traba importante. Y en el tema del servicio y la cata a ciegas, también hubo diferencias. Para la prueba de decantación, no estaban completos los implementos para todos; y para la cata del segundo día, reportaron que las copas tenían la etiqueta de la marca puesta y algunos participantes tuvieron que probar de la misma.
Los ganadores de esta edición fueron, Joseph Ruiz de Central en el primer lugar; Pedro Guerrero del restaurante IK en segundo y Ricardo Julián Quispe en tercer lugar. Como cierre no hubo entrega de premios a los concursantes, pero lo que espera Joseph es que esta vez sí les faciliten el boleto para viajar a Chile a participar en el Concurso del Sommelier de América, como está estipulado en el reglamento.
Este año, lamentablemente, no asistieron como parte del jurado el Presidente de la Alianza Panamericana de Sommeliers, Andrés Rosberg ni Ricardo Grellet, Vice Presidente de la Asociación Nacional de Sommeliers de Chile, debido justamente a temas de falta de organización de la APSOM para planificar su visita. A ellos se les ha informado acerca de estos inconvenientes y aseguran estar siguiendo de cerca el proceso, pero para la Alianza Panamericana es bien complicado incidir en asuntos internos de la asociación en Perú. “Si todos los actores involucrados se pusieran de acuerdo, avanzaría muy rápidamente. Sin embargo, en un contexto como el actual, APAS debe debatir los caminos a seguir mediante la vía institucional y no puede tomar decisiones a la ligera, lo que evidentemente hace que todo el proceso lleve tiempo”, confirmó Andrés Rosberg en la comunicación relativa al concurso.
La unión es lo deseable, pero hay situaciones límite y para la sumillería peruana, esta es la prueba. Se pide reestructuración, se piden cambios, aires frescos. Esto se está intentando desde fines del año pasado, cuando una gran parte de los profesionales que ejercen en restaurantes, así como algunos comunicadores relacionados con el tema, se adhirieron a la Unión Peruana de Sommeliers, en un intento por formar nuevas alianzas y porque el trabajo de la UPS ha transcurrido sin prisa pero sin pausa, aunque sin mayor ruido.
Detalles más, detalles menos; aquí no se trata de egos ni de quién lo hizo mejor o peor o quién será el próximo héroe en el Perú. El objetivo no es la crítica por la crítica, sino la toma de conciencia frente a la prueba de falta de organización y poca seriedad. A estos jóvenes sommeliers se les debe dar ejemplo. El mundo mira a Perú con admiración por su desarrollo gastronómico. Lo mismo debe pasar con la sumillería.
