Recorrimos Valdivia en cuatro días: desde sus bosques hasta su reservas plagadas de los choros más frescos que hemos probado. La intensidad y potencia de esta región solo se iguala al cariño de su gente y a ese secreto de tradición mapuche que se guarda con celo y se abre solo para los queridos amigos. Para aquellos de buen corazón y diente. Allá vamos.

Hemos perdido la noción del tiempo. Viajamos hace dos días por cielo, tierra y agua en territorio desconocido. Nuestra orientación se desvanece, pero lo importante se mantiene: un grupo de amigos que asegura que nos está llevando al Paraíso. Confiamos. Nos entregamos. Dicen que Valdivia, al sur de Chile en la Región de los Ríos, es una de las ciudades más hermosas del país. Que sus buques son eternos y sabios. Su gente sonriente y amable. Y sus sabores, esos que buscamos, son frescos, silvestres, únicos. La gente del Festival Gastronómico Ñam (se lleva a cabo todos los años en abril, en Santiago) lo sabe. Ya ha viajado varias veces antes a mapear la zona. De la mano de los expertos y autoridades regionales se han encargado de pintar una ruta intensa pero reveladora. Hoy, con nosotros a cuestas la repiten. Ellos se siguen asombrando de lo que encuentran, quedamos maravillados con la novedad.

Hay gente que captas a la primera mirada. Karime Harcha es una de ellas. Conservera, estudiosa, maestra, protectora. Karime es valdiviana y ama lo que hace. Ella es la persona que quieren que los lleve de la mano cuando no tienen ni idea de dónde están, que les abra un mundo de posibilidades nuevas. Que no se calle nada. El grupo con el que hemos viajado es múltiple: hay periodistas, fotógrafos y chefs del mundo. Nuestros descubrimientos son distintos, nuestros enganches diversos. A algunos los mueven las formas y colores, a otros las inmensidades, a todos nos unen los aromas y el sabor. Es por eso que Karime define la primera parada: el mercado fluvial. Ese lleno de productores que se acomoda desde temprano al lado del río Calle Calle y que, flanqueado por las viejas casonas valdivianas, espera visitantes y compradores. Hay pescado abundante (salmón y corvina), mariscos frescos (navajuelas, locos, coro Maltón, erizos, piures), tallos de cochayuyo, piñones, murta, castañas, miel recién recolectada, verduras, gigantes ajos chilotes, frutas y un tesoro: loyo (Boletus), ese hongo hermoso y gigante que solo crece unos días en la zona y cuya pulpa carnosa da para preparar los guisos y tartas más deliciosos. Los cocineros que integran el grupo eligen algunos ingredientes, van a cocinar en la noche en la cabaña y taller de trabajo Cabo Blanco, donde Karime recibe grupos de comelones y aficionados. Su cocina, su lugar.

Es temprano, tenemos todo el día y el bosque llama. Luego de algunas horas en bus llegamos. Hemos salido de la ciudad, hemos entrado al verde. A la reserva Pilunkwura que Pasqual Alva heredó de sus abuelos. Son 110 hectáreas de bosque que se mantiene gracias a los cuidados de este investigador. Pascual camina pausado pero con pie seguro. Conoce su bosque al milímetro y alimenta con sus recolecciones cocinas como la de Boragó, de Rodolfo Guzmán. La cabaña que ha levantado al ingreso de su espacio se ha convertido en una pequeña cafetería llamada Latúe, donde su nuera, Tania Maldonado, cocina maravillas. A pocos metros está el taller de maderas, donde con lo que cae del bosque se elaboran piezas pulidas, talladas, de impecable factura.

Pero el bosque llama. La caminata se impone y después de tanto tiempo sentados queramos mover las piernas. Dos horas que se transforman en tres: Pascual se detiene en cada arbusto, cada árbol, explica sus propiedades, cuenta su historia. El registro es inmenso. Las bendiciones parecen estar ahí desde toda la vida. La zona invita a la especiación pero también a la conservación. Y Pascual conoce cada rincón del camino de tierra y musgo. Hay que trepar, bajar, esquivar, todo para llegar a una ladera verde fresca salpicada de gotas de rocío y entreverada con hongos que empiezan a brotar. Más de 15 variedades de árboles, cerca de 28 arbustos, más de 80 tipos de hierbas y helechos, y otro tanto de hongos. La cafetería Latúe ha preparado el banquete para recargar fuerzas. Tania ya tenía armada la recolección. Hay pasteles y tartaletas rellenas con loyo, hongos de la pampa, pan casero, panqueques de papa y pebre de ajo, culantro y raíz de cochayuyo (ulte). Además, dulce: tartas de avellana y manzana limona y de murta.
 Es la cocina del bosque. Es el sabor silvestre y animado. Casero y reconfortante. Es lo que esperábamos.

Hoy vamos a comer todo el día. Valdivia, ya lo hemos dicho, es tierra de sabores. Y, como tal, no nos deja de alimentar. Pero esta vez el alimento va más allá de un simple pastel o una carne asada, es ese que te nutre de experiencias y que te engrandece el alma. El despertar de hoy es donde la machi Paola (Paola Aroca Cayunao), curandera, sabia, poderosa. Una mujer que sabe lo justo, que entiende como hacerte descansar el alma y reposar las ideas. Su historia es intensa: mapuche que vuelve de Europa, luego de años de estudios y andar, porque su gente y la tierra la llaman. Así, abre un centro de medicina ancestral y ahí, con las cabañas de su Kalfvgen Lodge, vigoriza la historia y consigue el sustento para seguir cuidado a su grupo. Es un circulo virtuoso, donde la hospitalidad y la buena comida son el motor del cambio. Su desayuno es fuerte: avena, murta, mantequilla con semillas de amapola, sopaipillas, pan recién hecho, miel, café caliente de trigo e infusiones Y con una sonrisa cristalina y amplia cuenta su vida. No guarda detalles, es libre en lo triste y en lo alegre. Y eso lo transmite en la sesión de sanación que nos realiza. Potente. Cargada de buena onda, nos deja exhaustos y llenos de energía. Con ganas de aprender más. Con ganas de volver.

Seguimos hasta el poblado de Antilhue, aproximadamente a media hora del lodge, donde Elizabeth Gutiérrez mantiene la tradición que hizo famoso al lugar: las tortillas o panes de rescoldo. Elizabeth tendrá unos 50 años. Su madre se dedicó a lo mismo y murió debido a una enfermedad que le generó el humo de la preparación “se le secaron los pulmones”, dice. Lo cuenta ya sin aparente tristeza. Como si fuera parte de un destino inevitable. Sabe que le puede pasar lo mismo pero es así como ha sacado adelante a su familia. En su casa, mientras hace las tortillas y rastrilla las brasas (hay que meterse dentro del horno para lograr el cometido y el calor es insoportable), se cuece una sabrosa cazuela que será el almuerzo familiar. Elizabeth nos invita a probar. Eso queremos, sabor de Antilhue animado con un buen trozo de queso local, chorizo artesanal y pan.

Después vienen pruebas de cerveza artesanal donde Sayka. La zona es famosa en el tema. Y luego al almuerzo. Sí, un imponente ágape organizado por cocineros de la cuenca del Ranco que incluye lo más típico de la cocina mapuche. Se nos ilumina la mirada, se nos resiente la panza. No podemos comer más, sin embargo esto es nuevo. Es algo que ni en el mismo Chile se conoce tanto. Cocina mapuche. Piñones salteados, sierra ahumada, pebres y un cordero que se deshace ni bien tocarlo: ahumado, oloroso, sabroso. Los alumnos de la escuela de cocina People Help People se han preparado todo el día para recibirnos. Hay lágrimas de emoción, hay miradas llenas de satisfacción y sabores únicos que cierran con tartas caseras de manjar y murta. Luego viene la cena: sí, la cena. Salimos del almuerzo tardío rumbo Chaihuín, en la comuna de Corral. Las doñas del sindicato local de pescadores han preparado el segundo banquete del día. No es broma. Hay choros, deliciosos, en una suerte de cazuela con criolla impecable, sierra ahumada, sopaipillas, dulces caseros, choros fritos. Hay humildad y sencillez. Calor de hogar. ¿Cómo resistirse?

EL REMATE Y EL CONTACTO

Último día antes de emprender la vuelta. Hoy el contacto con la tierra es más intenso aún. Hoy hay metida en el río Chaihuín. Búsqueda de choros maltones con Juvenal Triviños, el pescador más experimentado. Como pasa siempre, la cantidad ya no es tanta. La gente arrasa cuando el insumo abunda. Luego, se acaba y comienza la toma de conciencia. La veda. La protección. Hoy no hay nada. Así que cambiamos de lugar. Y ahí, en una de las amplias playas de la Reserva Costera Valdiviana, en el mismo Chaihuín, una lancha se lanza a “la mar”, a buscar los gigantes choros, esos que crecen en agua limpia y saben a dulce. Que llegan a la arena en balde para ser devorados con un chorro de limón.

Finalmente a las loberas del Quincho Mar y Tierra. A la ruca, la vivienda tradicional de los mapuche donde nos han organizado otro festín. Es cocina, si se puede, más tradicional aún. Se encuentra al lado de una impresionante lobera que parece sacada de una historia de Game of Thrones: Pacífico imponente que construye castillos de piedra con agua lavada y erosión. Hay despanzurrada previa en el paisaje inmenso. Nos sentimos pequeños. Mínimos.

Y, luego, cariño para la panza. Las señoras mapuches han preparado sierra ahumada, empanadas del mentado pez, torrejitas de cochayuyo, pebre y papas asadas. La sierra cuelga del techo de la ruca sobre las brasas calientes, el aroma se esparce. Invade. Esto es lo que buscamos cuando viajamos: honestidad en la cocina. Y esto es lo que encontramos en la mesa. De aquí nace todo, de este saber de toda la vida arranca una cocina potente. No de técnicas estilizadas ni de humos ni hidrógenos: si Chile quiere una cocina fuerte debe mirar a estos pueblos. A sus pueblos, a sus insumos, y comenzar el rescate. No recrear sin conocer la base. Aquí no hay secretos, solo reconocimiento de los sabores más primarios, de esos ancestrales que el mundo desconoce y que, aun no entendemos porqué, no encontramos en Santiago ni en el resto del mundo. Debemos aprender a mirar. Debemos volver.
