CHOCOLATES DE ALTO PORCENTAJE DE CACAO
Según la experta, los chocolates de alto porcentaje de cacao, como el Piura de Maraná o el Chanka de Amazona, se deben combinar con destilados como el ron añejo. “Un ron que tenga cuerpo, que haya pasado un tiempo considerable de crianza. Las notas tostadas de caramelo y especias que entrega el destilado, se amalgaman bien con la textura cremosa del chocolate y el sabor intenso del cacao con aromas de frutos secos y a veces florales”, afirma Melina. Recomendaciones: Ron Diplomático Reserva Exclusiva o el Zacapa 23.
CHOCOLATES FRUTADOS
Melina recomienda espumosos que destaquen el sabor de la fruta y el punto dulce, como el chocolate de camu camu y el de yacón. “Podemos acompañarlos de una espumante de burbujas rosadas, frescas, que resaltan los sabores más frutales”. Recomendaciones: Segura Viudas Lavit Rosé de España y Santa Digna de Torres, producido en Chile.
CHOCOLATES CON PICANTE
La periodista sugiere a los espumosos semi secos para este difícil maridaje. “El perfil del chocolate, con cierta intensidad, aumenta con la presencia del ají, que es bien aromático. Un espumoso delicado lo puede acompañar bien”, dice la experta. Recomendaciones: Espumante Tacama semi seco, Sweet de Juve&Camps o Prosecco de Zonin, si buscan algo más seco.
CHOCOLATES CON PERFIL AROMÁTICO DE FLORES
Para el Amador AM70, un chocolate negro con toques florales, Melina sugiere vino forticado. “Para este tipo de chocolate, recomiendo el Malamado de Zuccardi. Su nombre significa Malbec a la manera de Oporto, porque se produce como el vino emblemático del país luso; es decir, cortando la fermentación con brandy de uva. Esto garantiza cierto nivel de dulzor y mayor graduación alcohólica. En este caso, la base es la cepa bandera argentina”. Recomendación: Malamado de Zuccardi.
CHOCOLATES CON PERFIL AROMÁTICO DE FRUTAS
Para barras como el Amaz Dark al 63% de cacao, con sabores frutales y panela, Melina Bertocchi se atreve con un vino tinto de características frutales delicadas. “Aquí apostaría por acompañarlas con un Pinot Noir, ya que esta variedad tiene características frutales delicadas con notas de frutos del bosque maduros, pero con frescura. Si esto se une con la parte frutal del chocolate, puede funcionar muy bien”. Recomendación: Pinot Noir de la Patagonia Manos Negras Red Soil de Alejandro Sejanovich o Pinot Noir Cono Sur Reserva.
CHOCOLATE CON SAL DE MARAS
“Un buen pisco puede armonizar bien con el punto salado del chocolate gracias a la sal de Maras y la intensidad del cacao”, dice. Ella sugiere un pisco negra criolla y nos recomienda uno con notas tostadas y duraznos. Recomendación: Torre de la Gala Negra Criolla de Arequipa. Y recuerden: “Nada o casi nada es imposible si pensamos en maridaje”.
