ANNY RODRÍGUEZ: POSTRES PARA LA MEMORIA

De un pie de limón en casa a la pastelería de Kjolle, Anny lleva 12 años aprendiendo de maestras para que el último bocado sea el que se recuerde.

La carrera de Anny Rodríguez no ha seguido una línea recta. Comenzó en Venezuela y, como muchos, llegó a Lima pensando en quedarse seis meses. Ella creció entre cocinas que le enseñaron técnica, producto, disciplina y distintas maneras de cuidar a las personas. Doce años después, está al frente de la pastelería de Kjolle y mira el futuro como alguna vez se imaginó trabajando en Central: primero lo ve con claridad y luego construye el camino para llegar.

Antes de los restaurantes, los postres se preparaban en su casa: el pie de limón con su mamá y las recetas españolas de su abuela paterna. En 2009, durante un viaje a España y mientras decidía entre la gastronomía y la arquitectura, Anny Rodríguez entendió que la cocina podía ser más que un pasatiempo. “Si voy a estudiarla, voy a hacerlo bien, de manera profesional y completa”, decidió.

En 2014 llegó al Perú para estudiar durante seis meses y luego regresar a Venezuela. Anny se formó en pastelería y panadería en Le Cordon Bleu y continuó en D’Gallia junto con su hermana, combinando las clases con el trabajo. Su primer gran espacio profesional fue Ana Avellana, donde no solo encontró una escuela práctica: Ana Luisa Velarde les abrió las puertas del taller y, cuando lo necesitaron, también las de su casa. Ese liderazgo con humanidad marcó su primera experiencia laboral.

Desde allí llegó a Astrid & Gastón. Junto a Astrid Gutsche, Anny aprendió técnica, precisión y otra manera de relacionarse con los ingredientes. La lúcuma, la chirimoya, la quinua y la mashua no pertenecían a su memoria gustativa venezolana: tuvo que conocerlas, probarlas e interpretarlas. El Perú empezó a mostrarse producto por producto.

Después de cuatro años necesitó detenerse. Emprendió con su hermana y recibió una buena respuesta, pero extrañaba el vértigo del servicio. La oportunidad surgió gracias a Annia Ortiz, quien le ofreció un puesto en El Mercado, donde asumió la jefatura de pastelería y encontró en Rafael Osterling a otro mentor: exigente, cercano y dispuesto a confiar en su equipo. 

En 2015 comió en Central, todavía en Miraflores, miró la cocina y pensó: “Algún día voy a formar parte de este equipo”. Le tomó casi una década, pero llegó. Anny pasó sus primeros meses en la pastelería de Central y luego asumió el área en Kjolle. Allí ordenó recetarios, realizó pruebas y aprendió a leer la mirada de Pía León. 

El futuro que imagina tiene otro ritmo. Después de conocer las bakeries de Copenhague, sueña con un espacio vinculado a la naturaleza, donde alguien pueda tomar café, comer un croissant, conversar o pasar un momento a solas. Todavía no sabe si estará en Lima o en Venezuela, donde quisiera generar oportunidades y volver a mirar sus ingredientes con los ojos que desarrolló en el Perú.

Anny comenzó preparando pie de limón con su mamá y hoy piensa en el último bocado de una experiencia en Kjolle. Entre ambos momentos hay una pastelera que aprendió a leer el territorio a través de tubérculos, frutas, raíces y cortezas, sostenida por mentores, cocineros y casas que aparecieron en los momentos precisos. Algún día construirá un lugar donde la técnica produzca emoción y un postre pueda quedarse en la memoria, como permanecen en ella la dulzura de Ana, el rigor de Astrid, la confianza de Rafael, el territorio de Pía y las despensas de los países que le hicieron espacio.

Anny Rodríguez’s career has not followed a straight line. It began in Venezuela and, like many others, she arrived in Lima planning to stay for six months. She grew through kitchens that taught her technique, ingredients, discipline, and different ways of caring for people. Twelve years later, she leads Kjolle’s pastry kitchen and looks toward the future the same way she once imagined herself working at Central: first, she sees it clearly; then, she builds the path to get there.

Before restaurants, desserts were made at home: lemon pie with her mother and the Spanish recipes of her paternal grandmother. In 2009, during a trip to Spain and while deciding between gastronomy and architecture, Anny Rodriguez realized that cooking could be more than a pastime. “If I’m going to study it, I’m going to do it properly, professionally, and thoroughly,” she decided.

In 2014, she arrived in Peru to study for six months and then return to Venezuela. Anny trained in pastry and baking at Le Cordon Bleu and continued at D’Gallia alongside her sister, combining classes with work. Her first major professional kitchen was Ana Avellana, where she found more than practical training: Ana Luisa Velarde opened the doors of her workshop to them and, when they needed it, also the doors of her home. That leadership, grounded in humanity, shaped Anny’s first work experience.

From there, she moved on to Astrid & Gastón. Alongside Astrid Gutsche, Anny learned technique, precision, and another way of relating to ingredients. Lúcuma, cherimoya, quinoa, and mashua were not part of her Venezuelan flavor memory: she had to discover them, taste them, and interpret them. Peru began to reveal itself, one ingredient at a time.

After four years, she needed to pause. She started a business with her sister and received a positive response, but she missed the rush of service. The opportunity came through Annia Ortiz, who offered her a position at El Mercado, where she took charge of the pastry kitchen and found another mentor in Rafael Osterling: demanding, approachable, and willing to place his trust in his team.

In 2015, she dined at Central, still in Miraflores, looked toward the kitchen, and thought: “One day, I’m going to be part of this team.” It took her almost a decade, but she made it. She spent her first months in Central’s pastry kitchen before taking charge of the area at Kjolle. There, she organized recipe books, conducted trials, and learned to read Pía León’s gaze.

The future she imagines moves at a different pace. After discovering Copenhagen’s bakeries, she dreams of a space connected to nature, where someone can have a coffee, eat a croissant, talk, or spend a moment alone. She still does not know whether it will be in Lima or Venezuela, where she would like to create opportunities and look again at its ingredients through the eyes she developed in Peru.

Anny began by making lemon pie with her mother and today thinks about the final bite of an experience at Kjolle. Between those two moments is a pastry chef who learned to read the territory through tubers, fruits, roots, and barks, supported by mentors, cooks, and homes that appeared at precisely the right moments. One day, she will build a place where technique produces emotion and a dessert can remain in memory, just as Ana’s sweetness, Astrid’s rigor, Rafael’s trust, Pía’s territory, and the pantries of the countries that made room for her remain in hers.
