CLAUDIA MERCHÁN: LA MEMORIA COMO INGREDIENTE

La cocinera ecuatoriana lleva los sabores de su infancia en Cuenca a Simpar, el restaurante gallego que comparte con Áxel Smyth y que hoy ostenta una estrella Michelin.

Claudia Merchán creció en Cuenca mirando cocinar a su madre. Esa imagen, dice, fue la primera que le mostró que este camino era para ella. Años después, formada en el Basque Culinary Center, conoce a Áxel Smyth, su pareja y socio, con quien creó Simpar, en Galicia: un restaurante profundamente arraigado en el territorio español, donde Claudia encuentra la manera de introducir Ecuador a través de su pastelería.

La carta de Simpar gira en torno a la temporalidad gallega, pero entre los platos se cuelan memorias de Claudia, como la espumilla que comía de niña frente a las iglesias de Cuenca convertida en postre, una tarta de tres leches reinterpretada o las rocas aireadas hechas con chocolates de la Amazonía ecuatoriana en los petit fours. Hay un componente de nostalgia, pero sobre todo la esencia de esta cocinera llevada a la mesa de un restaurante que acumula reconocimientos.

El 2024 fue un año difícil de olvidar para Simpar. Llegó el primer Sol en la Guía Repsol, el primer lugar en el certamen de los mejores callos del mundo en San Sebastián Gastronómika y, el 26 de noviembre, su primera estrella Michelin. Claudia, además, cerró el año nominada a Pastelera Revelación en Madrid Fusión. En enero de 2025, su croqueta de jamón ibérico fue coronada la mejor de España.

Cuando le pregunto qué ha sido lo más difícil de sostener en esta carrera, Claudia responde que la presión emocional. “La gastronomía es una profesión muy exigente y existe una presión constante por hacer las cosas bien y mantener un nivel de excelencia todos los días. Aprender a gestionar esa exigencia ha sido uno de mis mayores retos”, explica. También reconoce que aprendió tarde a salir de su zona de confort y que «la mejor forma de crecer es exponerse a nuevos desafíos, observar, aprender y exigirse constantemente», dice. Claudia y Áxel van a ser padres muy pronto. Después de premios, reconocimientos y una estrella Michelin, para Claudia la maternidad será, probablemente, el siguiente territorio por explorar.

Claudia Merchán grew up in Cuenca watching her mother cook. That image, she says, was the first thing that showed her this was the path for her. Years later, after training at the Basque Culinary Center, she met Áxel Smyth, her partner and business partner, with whom she created Simpar in Galicia: a restaurant deeply rooted in its Spanish surroundings, where Claudia finds a way to introduce diners to Ecuador through her pastry.

The menu revolves around Galician seasonality, but Claudia’s memories find their way into the dishes, such as the espumilla she ate as a child in front of Cuenca’s churches, transformed into a dessert; a reinterpreted tres leches cake; or airy rocks made with chocolates from the Ecuadorian Amazon among the petit fours. There is an element of nostalgia, but above all, the essence of this chef brought to the table of a restaurant that continues to garner accolades.

2024 was a difficult year for Simpar to forget. It received its first Repsol Guide Sun, won first place in the world’s best tripe competition at San Sebastián Gastronomika and, on November 26, earned its first Michelin star. Claudia also ended the year nominated for the Revelation Pastry Chef award at Madrid Fusión. In January 2025, her Iberian ham croquette was crowned the best in Spain.

When I ask her what has been the hardest thing to sustain in this career, Claudia points to the emotional pressure. “Gastronomy is a very demanding profession, and there is constant pressure to do things well and maintain a level of excellence every day. Learning to manage that demand has been one of my greatest challenges,” she explains. She also acknowledges that she learned late to step outside her comfort zone and that “the best way to grow is to expose yourself to new challenges, observe, learn and constantly push yourself,” she says. Claudia and Áxel will soon become parents. After awards, accolades and a Michelin star, motherhood will probably be the next territory for Claudia to explore.
