MARÍA REYES QUISPE: LA TÍA ROSA DE LOS DULCES DE ANTAÑO

Acaba de cumplir 32 años en Acurio Restaurantes y durante todos estos años, junto a Astrid Gutsche, construyó la propuesta dulce de varias marcas.

La llaman Tía Rosa y aunque ese no es su nombre, ella responde feliz. Mujer emprendedora, dulcera y promotora de los postres de antaño, pone un ojo en la tradición y el otro en la innovación.

Rosa María la quiso llamar su abuela, pero sus padres eligieron María Magdalena. Y de ahí es que viene el entrevero, que no es de identidad ni de herencia ni de sabores, sino solo nominal. Por eso a María Reyes Quispe la vamos a presentar como Tía Rosa, que así la conocen en este mundo de postres en el que ella se formó y donde fue testigo de una revolución pastelera que (valga la aclaración) nunca rompió lazos con nuestra tradición.

Nació en Nasca y es la mayor de ocho hermanos, todos hábiles en cocina o pastelería porque desde pequeños veían a su madre preparar anticuchos. Desde niña, Tía Rosa, se hizo experta en picarones, manzanas dulces, toffee con maní, pastelitos de yuca y otras delicias más. La familia vivía en Carmen de la Legua Reynoso y, desde pequeños, todos los hermanos salían a vender al mercado la comida que preparaban.

Tía Rosa quiso ser enfermera, pero la oportunidad de un buen trabajo la llevó por otros rumbos. “Entre 1990 y 1994 trabajé en Cherry”, cuenta, recordando aquella cafetería de moda, célebre por su papillón de chirimoya o su charlotte de chocolate. Un estilo algo afrancesado que la puso en contacto con una joven vivaracha, de marcado acento extranjero, que llegó para compartir sus técnicas de pastelería. Astrid Gutsche se llamaba.

Astrid y Rosita se conocieron hace más de 30 años, cuando la dueña de Astrid & Gastón llegó al Perú. La conexión entre ambas fue inmediata y, cuando la pâtissier anunció que abriría su restaurante en Miraflores, Rosita la acompañó para integrar su equipo fundacional. “Empezamos en su departamentito. Al principio hacíamos cheesecakes, tartas, postres con masa philo rellena de frutas”. Cuenta que poco a poco el estilo del restaurante cambió, y que el primer dulce peruano que hicieron fue suspiro de limeña: le pusieron un toque de oporto al merengue y yemas al manjar. Allá por 2003 rayaron con la chirimoya alegre y, años después, rompieron esquemas con la creación de un ranfañote moderno para un menú degustación. 

Tía Rosa también fundó los Tanta, fue parte del taller creativo de Gastón Acurio en Barranco y jefa del área dulce que pasó a Chacarilla; viajó a 13 ciudades del mundo para abrir locales y capacitar personal; y desde hace 19 años da clases de repostería en la escuela de cocina de Pachacútec. Hoy, con 66 años, tres hijas y un nieto, Tía Rosa tiene su centro de operaciones en Ate, donde se producen postres para Tanta, El Bodegón, Barra Chalaca, Papachos y el espacio Lima Mundial del terminal nacional del aeropuerto Jorge Chávez. “La pastelería, si no es complicada, no es pastelería” es la máxima que Astrid le enseñó y que ahora ella transmite a su familia y sus pupilos. “Soy empírica. Si hubiera tenido plata, hubiera estudiado. Pero desde niña tuve esta pasión, y aprendí, porque cuando te gusta algo te esmeras en hacerlo”. He ahí el secreto de sus postres y de una vida feliz.

Everyone calls her Tía Rosa, and although that is not her real name, she happily answers to it. An entrepreneur, confectioner, and champion of traditional desserts, she keeps one eye on tradition and the other on innovation.

Her grandmother wanted to name her Rosa María, but her parents chose María Magdalena instead. That is where the confusion begins, not one of identity, heritage, or flavor, but simply of names. So we will introduce María Reyes Quispe as Tía Rosa, the name by which she is known throughout the pastry world where she trained and witnessed a confectionery revolution that, it should be said, never lost touch with Peru’s culinary traditions.

Born in Nasca, she is the eldest of eight siblings, all skilled in cooking or pastry because they grew up watching their mother prepare anticuchos. From an early age, Tía Rosa mastered picarones, candied apples, peanut toffee, yuca pastries, and many other sweet treats. The family lived in Carmen de la Legua Reynoso, and as children, all the siblings sold the food they prepared at the local market.

Tía Rosa dreamed of becoming a nurse, but the opportunity for a good job took her in another direction. “Between 1990 and 1994 I worked at Cherry,” she recalls, referring to the fashionable café famous for its cherimoya papillón and chocolate charlotte. Its somewhat French-inspired style introduced her to a lively young woman with a distinctive foreign accent who had arrived to share her pastry techniques. Her name was Astrid Gutsche.

Astrid and Rosita met more than 30 years ago, when the future co-founder of Astrid & Gastón arrived in Peru. They connected immediately, and when the pastry chef announced she would open her restaurant in Miraflores, Rosita joined the founding team. “We started in her tiny apartment. At first we made cheesecakes, tarts, and phyllo pastry desserts filled with fruit.” She explains that the restaurant’s style gradually evolved, and that the first Peruvian dessert they created was suspiro de limeña, adding a touch of port wine to the meringue and egg yolks to the dulce de leche. Around 2003 they experimented with chirimoya alegre, and years later they broke new ground by creating a modern version of ranfañote for a tasting menu.

Tía Rosa also helped establish the Tanta restaurants, became part of Gastón Acurio’s creative workshop in Barranco, and later led the pastry department after it moved to Chacarilla. She traveled to 13 cities around the world to open new restaurants and train staff, and for the past 19 years has taught pastry at the Pachacútec culinary school. Today, at 66 years old, with three daughters and one grandson, Tía Rosa operates from Ate, where desserts are produced for Tanta, El Bodegón, Barra Chalaca, Papachos, and the Lima Mundial space at Jorge Chávez International Airport’s domestic terminal. «If pastry isn’t complicated, it isn’t pastry,» is the principle Astrid taught her, one she now passes on to her family and students. “I’m self-taught. If I’d had the money, I would have studied formally. But I’ve had this passion since I was a child, and I learned because when you truly love something, you dedicate yourself to doing it well.” There lies the secret behind her desserts, and behind a happy life.
