JOSSI RIMACHI: THE FLAVOR OF OLLANTAYTAMBO

Words by Catherine Contreras (IG @caty.contrerasr)

Her smile melts away the frost; her wholesome, natural home cooking offers a warm embrace and fills the heart. Josefina Rimachi Ortiz de Orué hails from Ollantaytambo, in Cusco, and is the executive chef of El Albergue Ollantaytambo by Wendy Weeks. Her culinary touch is present not only at the century-old hotel, but also across all the sister establishments that orbit around it.

Sebastián’s mother and a cook devoted to her land, its flavors, and its ingredients, Jossi Rimachi inherited her mother Eusebia’s gift for Andean cooking. Eusebia, in turn, learned it from mamá Epifania, women devoted to the land and the hearth. Her father played a part, too: he taught her that all she needed to do was climb the hillside and look around to understand that everything necessary for a meal was right there in nature.

She has been called Jossi since childhood, when “mamá Wendy” gave her the nickname at El Albergue. Jossi grew up there, surrounded by the natural pantry of the Urubamba Valley and always connected to the beloved Cusco hotel established a century ago beside Ollantaytambo’s train station, where so many stories began. Jossi was part of them all: from Destilería Andina, the distillery that breathed new life into cañazo, the local sugarcane spirit, to Chuncho restaurant, Mayu café, and El Balcón (a boutique hotel housed in a 17th-century colonial residence built on earlier Inca terraces). Each of these ventures is rooted in the local food culture.

“I never went to culinary school,” Jossi once told us. Yet her knowledge of cooking and ingredients proved invaluable when she became a teacher to a new generation of cooks at the Pontifical Catholic University of Peru’s Faculty of Gastronomy, Hospitality, and Tourism. In Lima, she worked in the kitchen at Melange, and in Cusco, she also spent time at MIL, Virgilio Martínez and Pía León’s restaurant in Moray. In 2024, she returned to El Albergue. There, we find her happy, nourishing each venture with the traditions of her family’s Andean cooking and plenty of love. That is what Jossi brings to the table.
